Raid your fridge and you will be surprised at what you find! When I set out on this little adventure, I came across these:
- A couple of carrots
- A bag of rocket
- Some goats cheese
- A couple of small boiled potatoes
Using the above ingredients, this is the amazing salad I created,

which was delicious (even though I say so myself!), healthy and a very economical meal. There isn’t really a recipe, do what your heart fancies, but this is what I did with the ingredients:
- I used a potato peeler, to peel the carrot (it tastes lovely, but not like carrot! honestly!)
- I sliced and sautéed the potatoes (skin on) on a non stick pan and added black sesame seeds to them while being sautéed
- In a large white bowl, I threw together some rocket leaves, carrots and potatoes
- Crumbled over some left over goats cheese
- Added some sea salt from a height (not just a gimmick, I am told!) and some freshly ground pepper
- A drizzle of extra virgin olive oil was then added to the salad
That’s it! All ready to be consumed by hungry stomachs! Before I forget, since I love mayonnaise with just about everything, I always add to my meal (well, place it in a corner of my bowl, plate – so, no one thinks, it’s weird! Technically, I am at an age, where I shouldn’t really care about people, but I do….).and so, I did this time too – the salad was now talking even louder!
I would happily substitute:
- goats cheese with poached egg
- carrots with peeled zucchini (in fact peeled carrots and zucchini by itself make a great salad – with a dash of lime and some salt)
You could surely add the following to the salad if you have any in the fridge:
- sautéed mushrooms
- sautéed red onions
- some olives
Really, anything that takes your fancy, ..your meal, your rules ! Would love to hear your changes to this salad!
